Ingredients:

  • 1 can black beans, drained and rinsed
  • 1 can pinto beans, drained and rinsed
  • 1 can kidney beans, drained and rinsed
  • 1 can white beans, drained and rinsed
  • 2 cans diced tomatoes
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, diced (any color)
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 cups vegetable broth
  • Fresh cilantro for garnish (optional)

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and bell pepper, and sauté until softened, about 5 minutes.
  2. Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.
  3. Stir in the cumin, smoked paprika, chili powder, salt, and pepper. Cook for another minute to toast the spices.
  4. Add the canned diced tomatoes (with their juices), all the beans, and vegetable broth to the pot. Stir well to combine.
  5. Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 20-25 minutes, allowing the flavors to meld.
  6. Taste and adjust seasoning as needed. Serve hot, garnished with fresh cilantro if desired.
