Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 can (14 oz) diced tomatoes
  • 1 cup green or brown lentils, rinsed
  • 6 cups vegetable broth
  • 2 cups kale or spinach, chopped
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5 minutes until the vegetables are softened.
  2. Stir in the minced garlic, smoked paprika, and ground cumin. Cook for an additional minute until fragrant.
  3. Add the diced tomatoes, lentils, vegetable broth, and bay leaf. Bring to a boil, then reduce the heat to low and let simmer for about 25-30 minutes, or until the lentils are tender.
  4. Stir in the chopped kale or spinach and cook for another 5 minutes until the greens are wilted. Season with salt and pepper to taste.
  5. Remove the bay leaf before serving. Garnish with fresh parsley and enjoy!
