Ingredients:

  • 4 boneless chicken breasts
  • 2 tablespoons unsalted butter, softened
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh rosemary, chopped
  • 1 teaspoon lemon zest
  • Salt and pepper to taste
  • 1 pound green beans, trimmed
  • 1 pound baby potatoes, halved
  • 1 teaspoon paprika
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat the oven to 425°F (220°C).
  2. In a small bowl, mix the softened butter with minced garlic, thyme, rosemary, lemon zest, salt, and pepper to create the herb butter.
  3. Rub the herb butter all over the chicken breasts and set aside to marinate for 15 minutes.
  4. Toss the halved baby potatoes with olive oil, paprika, salt, and pepper. Spread them out on a baking sheet in a single layer.
  5. Roast the potatoes in the preheated oven for about 20 minutes, turning halfway through, until golden and crispy.
  6. While the potatoes are roasting, heat a skillet over medium heat. Add a tablespoon of olive oil and the marinated chicken breasts. Cook for about 6-7 minutes per side, or until fully cooked and golden brown.
  7. In the same skillet, add the green beans and sauté with a bit of olive oil and minced garlic for about 5-6 minutes until tender and vibrant green.
  8. Once everything is cooked, plate the chicken alongside the garlic green beans and roasted potatoes. Garnish with fresh parsley before serving.
