Ingredients:

  • 8 lamb chops
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup plain Greek yogurt
  • 1/4 cup fresh mint, chopped
  • 1 tablespoon lemon juice
  • 1 teaspoon honey (optional)

Instructions:

  1. In a bowl, mix olive oil, garlic, rosemary, thyme, parsley, salt, and black pepper to create a marinade.
  2. Coat the lamb chops with the marinade and let them sit for at least 30 minutes at room temperature, or refrigerate for up to 4 hours.
