Ingredients:

  • 4 bone-in pork chops
  • 1 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh thyme, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 egg, beaten
  • 2 apples, peeled and diced
  • 1/2 onion, diced
  • 1/4 cup apple cider vinegar
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 2 tablespoons olive oil

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix the breadcrumbs, Parmesan cheese, parsley, thyme, garlic, salt, and pepper.
  3. Dip each pork chop in the beaten egg, then coat with the breadcrumb mixture, pressing to adhere.
  4. Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the pork chops for 3-4 minutes on each side until golden brown.
  5. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the pork chops reach an internal temperature of 145°F (63°C).
  6. While the pork chops are baking, prepare the apple chutney. In a saucepan, combine the diced apples, onion, apple cider vinegar, brown sugar, cinnamon, and nutmeg.
  7. Cook over medium heat for about 10-15 minutes, stirring occasionally, until the apples are soft and the mixture thickens.
  8. Serve the herb-crusted pork chops hot, topped with the apple chutney.
