Ingredients:

  • 1 lb pork fillet
  • 2 tablespoons olive oil
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 cup apple cider
  • 1 tablespoon Dijon mustard
  • 1 tablespoon maple syrup
  • 1 tablespoon apple cider vinegar
  • Fresh parsley for garnish

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, mix the olive oil, rosemary, thyme, garlic, salt, and pepper to create a herb paste.
  3. Rub the herb paste all over the pork fillet, ensuring it's well coated.
  4. Heat a skillet over medium-high heat and sear the pork fillet on all sides until golden brown, about 3-4 minutes per side.
  5. Transfer the pork fillet to a baking dish and roast in the preheated oven for 20-25 minutes or until the internal temperature reaches 145°F (63°C).
  6. While the pork is roasting, prepare the apple-cider glaze. In a saucepan, combine the apple cider, Dijon mustard, maple syrup, and apple cider vinegar. Bring to a simmer over medium heat and reduce until slightly thickened, about 10 minutes.
  7. Once the pork is cooked, remove it from the oven and let it rest for 5 minutes before slicing.
  8. Drizzle the apple-cider glaze over the sliced pork fillet and garnish with fresh parsley before serving.
