Ingredients:

  • 2 lb pork loin
  • 2 tbsp olive oil
  • 2 tbsp Dijon mustard
  • 1 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme, chopped
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 1/2 cup apple cider
  • 1 tbsp apple cider vinegar
  • 1 tbsp honey
  • 1/2 tsp ground cinnamon

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a small bowl, mix the olive oil, Dijon mustard, salt, and pepper. Rub this mixture all over the pork loin.
  3. In another bowl, combine the breadcrumbs, Parmesan cheese, rosemary, thyme, garlic powder, and a pinch of salt and pepper.
  4. Press the breadcrumb mixture onto the pork loin to create an even crust.
  5. Place the pork loin on a roasting pan and roast in the preheated oven for about 1 hour, or until the internal temperature reaches 145°F (63°C).
  6. While the pork is roasting, prepare the glaze by combining apple cider, apple cider vinegar, honey, and cinnamon in a small saucepan. Bring to a simmer and reduce until slightly thickened, about 10-15 minutes.
  7. Once the pork is cooked, remove it from the oven and let it rest for 10 minutes before slicing.
  8. Drizzle the apple-cider glaze over the sliced pork loin and serve immediately.
