Ingredients:

  • 3 lb beef roast (ribeye or sirloin)
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 4 cloves garlic, minced
  • 1 lb baby carrots
  • 2 tablespoons maple syrup
  • 1 cup fresh cranberries
  • 1/2 cup sugar
  • 1/2 cup water
  • 1 tablespoon lemon juice

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Rub the beef roast with olive oil, salt, pepper, rosemary, thyme, and minced garlic. Allow it to sit at room temperature for 30 minutes.
  3. Place the beef roast in a roasting pan and roast in the preheated oven for about 1 hour, or until the internal temperature reaches 135°F (57°C) for medium-rare.
  4. While the beef is roasting, prepare the carrots. In a skillet, combine the baby carrots and maple syrup over medium heat. Cook until the carrots are tender and caramelized, about 10-15 minutes. Set aside.
  5. To make the cranberry sauce, combine fresh cranberries, sugar, water, and lemon juice in a saucepan. Bring to a boil and then reduce to a simmer, cooking until the cranberries burst and the sauce thickens, about 10 minutes.
  6. Once the beef is done, let it rest for 15 minutes before slicing. Serve the roast beef with maple-glazed carrots and a generous spoonful of cranberry sauce.
