Ingredients:

  • 3 lb beef roast (such as ribeye or sirloin)
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 lb baby potatoes, halved
  • 1/4 cup grated Parmesan cheese
  • 1 lb green beans, trimmed
  • 2 tbsp butter
  • 1 tsp lemon juice

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, mix olive oil, minced garlic, rosemary, thyme, salt, and black pepper to create a herb paste.
  3. Rub the herb paste all over the beef roast, ensuring it is evenly coated.
  4. Place the roast on a rack in a roasting pan and roast in the preheated oven for about 1.5 hours, or until it reaches your desired level of doneness (135°F for medium-rare).
  5. While the beef is roasting, prepare the baby potatoes. Toss halved potatoes with olive oil, salt, and grated Parmesan cheese in a large bowl.
