Ingredients:

  • 4 thick pork chops
  • 1 cup breadcrumbs
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh rosemary, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup Dijon mustard
  • 1/2 cup apple cider
  • 1 tablespoon brown sugar
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons olive oil

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, combine breadcrumbs, parsley, thyme, rosemary, garlic, salt, and pepper.
  3. Brush each pork chop with Dijon mustard on both sides.
  4. Coat the pork chops in the breadcrumb mixture, pressing gently to adhere.
  5. In a large oven-safe skillet, heat olive oil over medium-high heat. Sear the pork chops for 3-4 minutes on each side until golden brown.
  6. In a small saucepan, combine apple cider, brown sugar, and apple cider vinegar. Bring to a simmer and cook for about 5 minutes until slightly thickened.
  7. Pour the apple-cider glaze over the seared pork chops in the skillet.
  8. Transfer the skillet to the oven and bake for 20-25 minutes, or until the pork chops reach an internal temperature of 145°F (63°C).
  9. Let the pork chops rest for 5 minutes before serving. Drizzle with additional apple-cider glaze if desired.
