Ingredients:

  • 2 lbs top round beef
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste
  • 4 carrots, chopped
  • 2 zucchinis, chopped
  • 1 red bell pepper, chopped
  • 1 onion, cut into wedges
  • 1 teaspoon balsamic vinegar

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a small bowl, mix olive oil, minced garlic, rosemary, thyme, parsley, salt, and pepper.
