Ingredients:

  • 2 chicken breasts
  • 1 cup rice
  • 1 can green beans, drained
  • 2 tablespoons olive oil
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Zest of 1 lemon
  • 2 cups chicken broth
  • 1 tablespoon butter

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a small bowl, mix olive oil, parsley, thyme, garlic powder, onion powder, salt, pepper, and lemon zest to create a marinade.
  3. Rub the marinade over the chicken breasts, ensuring they are well coated.
  4. In a skillet over medium heat, sear the chicken breasts for about 3-4 minutes on each side until golden brown.
  5. Transfer the chicken to a baking dish and bake in the oven for 20-25 minutes or until the internal temperature reaches 165°F (75°C).
  6. While the chicken is baking, rinse the rice under cold water until the water runs clear. In a saucepan, bring the chicken broth to a boil.
  7. Add the rinsed rice to the boiling broth, cover, and reduce heat to low. Cook for about 15-18 minutes until the rice is tender and the liquid is absorbed.
  8. In a separate pot, heat the drained green beans over medium heat. Add butter and season with salt and pepper. Stir to combine and heat through.
  9. Once the chicken is done, slice it and serve it over the rice with the green beans on the side.
