Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • Juice and zest of 1 lemon
  • 4 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh thyme, chopped
  • Salt and pepper to taste

Instructions:

  1. In a bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, parsley, thyme, salt, and pepper to create the marinade.
  2. Place the chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over the chicken. Seal or cover, and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.
  3. Preheat the grill to medium-high heat. Remove the chicken from the marinade, allowing excess to drip off.
