Ingredients:

  • 4 chicken breasts
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • Juice and zest of 1 lemon
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • Salt and pepper to taste
  • 1/2 teaspoon paprika

Instructions:

  1. In a bowl, whisk together olive oil, minced garlic, lemon juice and zest, chopped rosemary, thyme, salt, pepper, and paprika.
  2. Place chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over them. Seal the bag or cover the dish, and refrigerate for at least 1 hour, or up to 4 hours for maximum flavor.
  3. Preheat your oven to 400°F (200°C).
  4. Remove the chicken from the marinade and place it on a baking sheet lined with parchment paper.
  5. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  6. Let the chicken rest for 5 minutes before slicing. Serve warm with your choice of sides.
