Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • Juice and zest of 1 lemon
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon fresh rosemary, chopped
  • Salt and pepper to taste
  • 2 cups mixed seasonal vegetables (e.g., bell peppers, zucchini, carrots)
  • 1 teaspoon dried oregano
  • 1 tablespoon balsamic vinegar

Instructions:

  1. In a bowl, whisk together olive oil, minced garlic, lemon juice, lemon zest, thyme, rosemary, salt, and pepper.
