Ingredients:

  • 1 whole chicken (about 4-5 lbs)
  • 4 cloves garlic, minced
  • 1 lemon, zested and juiced
  • 1/4 cup olive oil
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper to taste
  • 1 onion, quartered
  • 1 cup chicken broth

Instructions:

  1. Preheat the oven to 425°F (220°C).
  2. In a bowl, combine minced garlic, lemon juice, lemon zest, olive oil, chopped rosemary, thyme, parsley, salt, and pepper to create a marinade.
  3. Pat the chicken dry with paper towels and place it in a large roasting pan.
  4. Rub the marinade all over the chicken, making sure to get it under the skin for maximum flavor.
  5. Stuff the cavity of the chicken with the quartered onion.
  6. Pour the chicken broth into the bottom of the roasting pan to keep the chicken moist while roasting.
  7. Roast the chicken in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).
  8. Baste the chicken with the pan juices halfway through cooking.
  9. Once cooked, remove from oven and let it rest for 10-15 minutes before carving.
