Ingredients:

  • 4 boneless, skinless chicken breasts
  • 4 medium-sized potatoes, peeled and cubed
  • 4 cloves of garlic, minced
  • 1/4 cup olive oil
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper to taste
  • 1/2 cup milk
  • 2 tablespoons butter

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix olive oil, rosemary, thyme, salt, and pepper. Coat the chicken breasts in the herb mixture.
  3. Place the chicken on a baking sheet and roast in the preheated oven for 25-30 minutes or until the internal temperature reaches 165°F (75°C).
  4. While the chicken is roasting, boil the cubed potatoes in salted water until tender, about 15-20 minutes.
  5. Drain the potatoes and return them to the pot. Add minced garlic, milk, and butter. Mash until creamy and smooth. Season with salt and pepper to taste.
