Ingredients:

  • 4 chicken thighs, skinless
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 lemon, juiced and zested
  • Salt and pepper to taste
  • 2 large potatoes, peeled and cubed
  • 1 head of garlic
  • 1/4 cup low-fat milk
  • 2 tablespoons butter
  • Fresh parsley for garnish

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Wrap the head of garlic in aluminum foil and roast in the oven for about 30 minutes until soft.
  3. In a bowl, mix olive oil, minced garlic, rosemary, thyme, lemon juice, lemon zest, salt, and pepper.
  4. Add the chicken thighs to the marinade, ensuring they're well coated. Let them marinate for at least 15 minutes.
  5. Place the marinated chicken on a baking sheet and bake for 25-30 minutes, or until cooked through.
  6. While the chicken is baking, boil the cubed potatoes in salted water until tender, about 15 minutes.
  7. Once the garlic is roasted, squeeze the cloves out of their skins and add them to the potatoes.
  8. Mash the potatoes with the roasted garlic, milk, and butter until smooth. Season with salt and pepper to taste.
  9. Serve the chicken over a bed of garlic mashed potatoes, garnished with fresh parsley.
