Ingredients:

  • 4 chicken thighs, skin-on and bone-in
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 lemon, zested and juiced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper, to taste
  • 1 teaspoon paprika
  • Fresh parsley, for garnish

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine olive oil, minced garlic, lemon zest, lemon juice, rosemary, thyme, salt, pepper, and paprika.
  3. Add the chicken thighs to the bowl and coat them well with the marinade. Allow to marinate for at least 30 minutes, or up to overnight in the refrigerator for deeper flavor.
  4. Place the marinated chicken thighs in a baking dish, skin side up.
  5. Roast in the preheated oven for 35-40 minutes, or until the chicken is golden brown and reaches an internal temperature of 165°F (75°C).
  6. Remove from the oven and let rest for 5 minutes before serving.
  7. Garnish with fresh parsley and serve with your favorite sides.
