Ingredients:

  • 1 chicken breast
  • 2 large carrots, peeled and sliced
  • 1 cup mushrooms, sliced
  • 2 large potatoes, peeled and cubed
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons butter
  • 1/4 cup milk

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix the sliced carrots and mushrooms with 1 tablespoon of olive oil, thyme, rosemary, salt, and pepper. Spread them on a baking sheet.
  3. Rub the chicken breast with the remaining olive oil, salt, and pepper. Place it on the baking sheet with the vegetables.
  4. Roast in the preheated oven for about 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the vegetables are tender.
  5. While the chicken and vegetables are roasting, place the cubed potatoes in a pot of salted water. Bring to a boil and cook until tender, about 15 minutes.
  6. Drain the potatoes and return them to the pot. Add the minced garlic, butter, and milk. Mash until smooth and creamy. Season with salt and pepper to taste.
  7. Serve the roasted chicken with the carrots and mushrooms alongside the garlic mashed potatoes.
