  • 4 chicken thighs (bone-in, skin-on)
  • 2 tablespoons olive oil
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 pound potatoes (Yukon Gold or russet), peeled and cubed
  • 1/4 cup butter
  • 1/2 cup milk
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, mix olive oil, rosemary, thyme, minced garlic, salt, and pepper.
  3. Rub the herb mixture all over the chicken thighs, ensuring they are well-coated.
  4. Place the chicken thighs in a baking dish and roast in the preheated oven for 35-40 minutes, or until the internal temperature reaches 165°F (75°C) and the skin is crispy.
  5. While the chicken is roasting, bring a pot of salted water to a boil. Add the cubed potatoes and cook until tender, about 15-20 minutes.
  6. Drain the potatoes and return them to the pot. Add butter, milk, garlic powder, and onion powder. Mash until smooth and creamy.
