Ingredients:

  • 1 whole chicken (about 4-5 lbs)
  • 4 cloves garlic, minced
  • 2 lemons, zested and juiced
  • 1/4 cup unsalted butter, softened
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper to taste
  • Olive oil
  • 1 onion, quartered
  • 1 cup chicken broth

Instructions:

  1. Preheat the oven to 425°F (220°C).
  2. In a bowl, mix the softened butter with minced garlic, lemon zest, thyme, rosemary, parsley, salt, and pepper.
  3. Pat the chicken dry with paper towels and carefully loosen the skin over the breast and thighs.
  4. Spread the herb butter mixture under the skin, ensuring even coverage.
  5. Rub the outside of the chicken with olive oil, and season generously with salt and pepper.
  6. Place the quartered onion inside the cavity of the chicken and squeeze the lemon juice over the top.
  7. Arrange the chicken in a roasting pan and pour the chicken broth into the bottom of the pan.
  8. Roast in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).
  9. Baste the chicken with the pan juices halfway through cooking for added moisture.
  10. Let the chicken rest for 10-15 minutes before carving and serve with the pan juices.
