Ingredients:

  • 1 whole chicken (about 4-5 lbs)
  • 4 tablespoons olive oil
  • 2 lemons (1 sliced, 1 juiced)
  • 8 cloves garlic (4 whole, 4 minced)
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste
  • 1 cup chicken broth
  • Vegetables for roasting (such as carrots, potatoes, and onions)

Instructions:

  1. Preheat the oven to 425°F (220°C).
  2. In a small bowl, mix olive oil, lemon juice, minced garlic, rosemary, thyme, parsley, salt, and pepper to create a marinade.
  3. Pat the chicken dry with paper towels and place it in a roasting pan.
  4. Gently loosen the skin of the chicken and rub the marinade under the skin and all over the chicken.
  5. Stuff the cavity of the chicken with the lemon slices and whole garlic cloves.
  6. Arrange your choice of vegetables around the chicken in the roasting pan.
  7. Pour the chicken broth into the bottom of the pan to keep the chicken moist during roasting.
  8. Roast the chicken in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).
  9. Let the chicken rest for 10-15 minutes before carving. Serve with the roasted vegetables.
