Ingredients:

  • 1 lb beef strips
  • 2 cups basmati rice
  • 1 cup diced tomatoes
  • 2 medium potatoes, cubed
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. In a bowl, combine beef strips with olive oil, garlic, cumin, paprika, oregano, salt, and pepper. Marinate for at least 30 minutes.
  2. Preheat the oven to 400°F (200°C). Toss cubed potatoes with olive oil, salt, and pepper, and spread them on a baking sheet. Roast for 25-30 minutes, or until golden and crispy.
  3. In a pot, bring 4 cups of water to a boil. Add basmati rice and a pinch of salt. Cook according to package instructions, usually about 15-20 minutes, until tender. Fluff with a fork and set aside.
  4. In a large skillet, heat a bit of olive oil over medium heat. Sauté the onions until translucent, then add the marinated beef strips. Cook until browned and cooked through, about 5-7 minutes.
  5. Add diced tomatoes to the skillet and cook for another 3-4 minutes until the tomatoes soften and create a sauce. Adjust seasoning if necessary.
  6. Serve the beef and tomato mixture over the basmati rice, with roasted potatoes on the side. Garnish with fresh parsley.
