Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 bay leaf
  • 2 cups chicken broth
  • 1 cup black beans, canned and rinsed
  • 1 cup long-grain rice
  • 2 cups water
  • 1 lime, juiced and zested
  • 1/4 cup fresh cilantro, chopped
  • 1 tablespoon olive oil
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika

Instructions:

  1. In a large pot, combine chicken breasts, salt, black pepper, garlic powder, onion powder, bay leaf, and chicken broth. Bring to a boil, then reduce heat to low and simmer for about 20-25 minutes or until the chicken is cooked through.
  2. While the chicken is cooking, rinse the rice under cold water until the water runs clear. In a separate pot, combine the rinsed rice, water, cumin, and paprika. Bring to a boil, then reduce heat to low, cover, and cook for 15-20 minutes until the rice is tender.
  3. Once the rice is cooked, remove from heat and fluff with a fork. Stir in lime juice, lime zest, cilantro, and olive oil. Set aside.
  4. In the last few minutes of the chicken cooking, add the rinsed black beans to the pot to heat through.
  5. Remove the chicken from the pot, slice it, and serve alongside the cilantro lime rice and black beans.
