Ingredients:

  • 2 cups cooked rice
  • 1 lb boneless, skinless chicken breasts
  • 2 cups frozen mixed vegetables (like peas, carrots, and corn)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Juice of 1 lemon
  • Fresh parsley for garnish

Instructions:

  1. In a bowl, mix olive oil, garlic powder, onion powder, thyme, oregano, salt, pepper, and lemon juice. Add the chicken breasts and marinate for at least 30 minutes.
  2. In a large skillet, heat some oil over medium heat. Add the marinated chicken and cook for about 6-7 minutes on each side, or until the chicken is cooked through and golden brown. Remove from the skillet and let it rest before slicing.
  3. In the same skillet, add the frozen mixed vegetables and sauté for about 5-7 minutes until heated through and tender. Season with salt and pepper.
