Ingredients:

  • 2 cups mixed dried beans (such as black beans, pinto beans, and kidney beans)
  • 4 cups vegetable broth
  • 1 head of garlic, roasted
  • 1 onion, diced
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Soak the mixed beans in water overnight. Drain and rinse before cooking.
  2. In a large pot, heat olive oil over medium heat. Add diced onion and sauté until translucent.
  3. Add the soaked beans to the pot along with vegetable broth, smoked paprika, thyme, rosemary, salt, and pepper.
  4. Bring to a boil, then reduce the heat and let simmer for about 1.5 to 2 hours, or until beans are tender.
  5. In the last 15 minutes of cooking, add the roasted garlic by squeezing the cloves out of their skins and stirring them into the beans.
  6. Once cooked, adjust seasoning if necessary and garnish with fresh parsley before serving.
