Ingredients:

  • 4 large eggs
  • 1/2 cup black beans, rinsed and drained
  • 1/4 cup diced bell peppers (red, green, or yellow)
  • 1/4 cup diced onions
  • 1/4 cup corn (fresh or frozen)
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 4 whole wheat tortillas
  • 1/4 cup shredded cheese (optional)
  • Fresh cilantro for garnish
  • Avocado slices (optional)

Instructions:

  1. In a skillet, heat olive oil over medium heat. Add diced onions and bell peppers, sautéing until they are soft, about 3-4 minutes.
  2. Add corn and black beans to the skillet, cooking for an additional 2 minutes until heated through.
  3. In a bowl, whisk the eggs with smoked paprika, salt, and pepper. Pour the egg mixture into the skillet, stirring gently until the eggs are fully cooked.
  4. Warm the tortillas in a separate pan or microwave until pliable.
  5. Divide the egg mixture among the tortillas. If desired, sprinkle shredded cheese on top.
  6. Roll up the tortillas tightly, folding in the sides to secure the filling. Serve with avocado slices and fresh cilantro on top.
