Ingredients:

  • 1 cup almond flour
  • 1/2 cup rolled oats
  • 1/2 cup protein powder (vanilla or chocolate flavor)
  • 1/2 cup creamy nut butter (such as almond or peanut butter)
  • 1/4 cup honey or maple syrup
  • 1/4 cup dark chocolate chips
  • 1/4 cup chopped nuts (such as walnuts or pecans)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the almond flour, rolled oats, protein powder, baking soda, and salt.
  3. In another bowl, mix together the nut butter, honey (or maple syrup), and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and mix until well combined.
  5. Fold in the dark chocolate chips and chopped nuts.
  6. Scoop tablespoon-sized portions of the cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes, or until the edges are golden brown. The centers may look slightly underbaked, but they will firm up as they cool.
  8. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
