Homemade Cheddar Potato Tater Tots

Ingredients:

  • 2 large russet potatoes
  • 1 cup shredded cheddar cheese
  • 1/4 cup cornstarch
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Oil for frying (vegetable or canola)

Instructions:

  1. Peel the russet potatoes and cut them into chunks. Boil in salted water until tender, about 15-20 minutes. Drain and let cool slightly.
  2. In a mixing bowl, mash the cooked potatoes until smooth. Stir in the shredded cheddar cheese, cornstarch, salt, black pepper, garlic powder, and onion powder. Mix until well combined.
  3. Shape the potato mixture into small oval or cylindrical tots, about 1 inch in length.
  4. Heat oil in a deep frying pan over medium heat. Carefully add the tater tots to the hot oil in batches, making sure not to overcrowd the pan.
  5. Fry the tater tots for about 3-4 minutes on each side, or until golden brown and crispy. Remove from oil and drain on paper towels.
