Ingredients:

  • 1 lb boneless, skinless chicken thighs
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 tablespoon rice vinegar
  • 1 cup broccoli florets
  • 1 cup sliced zucchini
  • 1 cup sliced bell peppers
  • 2 cups cooked white rice
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions:

  1. In a bowl, combine soy sauce, vegetable oil, sesame oil, garlic, ginger, and rice vinegar. Mix well.
  2. Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes.
  3. Heat a large skillet or grill pan over medium-high heat. Remove chicken from marinade and cook for about 5-7 minutes on each side, or until cooked through and juices run clear. Remove from heat and let rest for a few minutes before slicing.
  4. In the same skillet, add a little more oil if needed and sauté the broccoli, zucchini, and bell peppers until tender, about 5-6 minutes. Season with salt and pepper.
  5. In a separate pan, stir-fry the cooked rice with chopped green onions for about 3-4 minutes until heated through.
  6. Serve the sliced chicken on a plate with sautéed vegetables and fried rice on the side.
