Ingredients:

  • 1 cup heavy cream
  • 1 cup whole milk
  • 1/2 cup honey
  • 1 tablespoon dried culinary lavender
  • 1 packet (2 1/4 teaspoons) unflavored gelatin
  • 1/4 cup cold water
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions:

  1. In a small saucepan, combine the heavy cream, whole milk, honey, dried lavender, and a pinch of salt. Heat over medium heat until the mixture is hot but not boiling, stirring occasionally.
  2. Remove the saucepan from heat and let it steep for about 10-15 minutes to infuse the lavender flavor.
  3. In a small bowl, sprinkle the gelatin over the cold water and let it bloom for about 5 minutes.
  4. After the lavender has steeped, strain the cream mixture through a fine-mesh sieve to remove the lavender buds. Return the strained mixture to the saucepan.
  5. Add the bloomed gelatin to the warm cream mixture, stirring until the gelatin is completely dissolved. Stir in the vanilla extract.
  6. Pour the mixture into individual serving cups or ramekins. Refrigerate for at least 4 hours or until set.
  7. To serve, you can garnish with fresh berries or a drizzle of honey, if desired.
