Ingredients:

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, cold and cubed
  • 1 tablespoon dried culinary lavender
  • 1/2 cup heavy cream
  • 1/4 cup honey
  • 1 teaspoon vanilla extract
  • 1 egg, beaten (for egg wash)

Instructions:

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Add the cold butter to the flour mixture and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.
  4. Stir in the dried lavender.
  5. In a separate bowl, combine the heavy cream, honey, and vanilla extract. Mix until well combined.
  6. Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix.
  7. Turn the dough out onto a lightly floured surface and gently knead it a few times until it comes together.
  8. Pat the dough into a circle about 1 inch thick. Cut into wedges or use a round cutter to shape.
  9. Place the scones on the prepared baking sheet. Brush the tops with the beaten egg.
  10. Bake for 15-20 minutes, or until golden brown. Allow to cool slightly before serving.
