Ingredients:

  • 1 cup rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon sea salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup honey
  • 1/4 cup brown sugar, packed
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1/4 cup sunflower seeds
  • 1/4 cup raisins (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, combine the rolled oats, flour, baking soda, cinnamon, and sea salt. Set aside.
  3. In a large mixing bowl, cream together the softened butter, honey, and brown sugar until well combined.
  4. Beat in the egg and vanilla extract until smooth.
  5. Gradually mix in the dry ingredients until just combined. Stir in the sunflower seeds and raisins if using.
  6. Drop spoonfuls of the dough onto the prepared baking sheet, leaving some space between each cookie.
  7. Bake for 10-12 minutes or until the edges are golden brown. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
