Ingredients:

  • 1 cup rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup honey
  • 1/4 cup brown sugar, packed
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1/2 cup raisins or chocolate chips (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, mix together the rolled oats, flour, baking soda, cinnamon, and salt.
  3. In a large bowl, cream together the softened butter, honey, and brown sugar until smooth.
  4. Add the vanilla extract and egg to the butter mixture, mixing until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. If using, fold in the raisins or chocolate chips.
  6. Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes or until the edges are lightly golden. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
