Honey Soy Chicken Thighs with Broccoli and Bok Choy

Ingredients:

  • 4 chicken thighs, bone-in and skin-on
  • 2 tablespoons hot honey
  • 3 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 onion, sliced
  • 1 red capsicum, sliced
  • 2 cups broccoli florets
  • 2 cups bok choy, chopped
  • 1 large kumara, peeled and diced
  • Salt and pepper to taste
  • Sesame seeds for garnish (optional)

Instructions:

  1. Preheat your oven to 200°C (400°F).
  2. In a bowl, mix the hot honey and soy sauce together. Marinate the chicken thighs in this mixture for at least 30 minutes.
  3. While the chicken is marinating, toss the diced kumara with olive oil, salt, and pepper on a baking sheet. Roast in the oven for about 20-25 minutes or until tender.
  4. In a large skillet over medium heat, add a little olive oil and sauté the onions until translucent. Add the sliced capsicum and cook until slightly softened.
  5. Push the vegetables to one side of the skillet and add the marinated chicken thighs, skin-side down. Sear for about 5 minutes until browned.
  6. Turn the chicken over and add the broccoli and bok choy around the thighs. Pour the remaining marinade over the chicken and vegetables.
  7. Cover the skillet and reduce the heat to low. Cook for about 15-20 minutes or until the chicken is cooked through and the vegetables are tender.
  8. Once the kumara is done roasting, serve it alongside the chicken and vegetables. Garnish with sesame seeds if desired.
