Ingredients:

  • 2 tuna steaks (about 6 oz each)
  • 2 tablespoons hot mustard
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil
  • 1 cup couscous
  • 1 1/4 cups vegetable broth
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/4 cup chopped green onions
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions:

  1. In a small bowl, mix the hot mustard and soy sauce together to create a marinade.
  2. Brush the tuna steaks with olive oil and season with salt and pepper.
  3. Heat a skillet over medium-high heat and sear the tuna steaks for about 2-3 minutes on each side, or until desired doneness.
  4. During the last minute of cooking, brush the hot mustard mixture over the tuna to glaze it.
  5. While the tuna is cooking, prepare the couscous. In a saucepan, bring the vegetable broth to a boil.
  6. Add the couscous to the boiling broth, cover, and remove from heat. Let it sit for 5 minutes.
  7. Fluff the couscous with a fork, then stir in the parsley, mint, green onions, lemon juice, and season with salt and pepper.
  8. Serve the seared tuna over the herby couscous, drizzling any remaining glaze on top.
