Ingredients:

  • 1 cup cream cheese, softened
  • 1/2 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 cup Irish cream liqueur
  • 1/4 cup Kahlua
  • 1 large egg
  • 1/4 cup sour cream
  • 1/2 cup graham cracker crumbs
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon sugar (for crust)

Instructions:

  1. Preheat the oven to 325°F (160°C).
  2. In a small bowl, combine the graham cracker crumbs, melted butter, and 1 tablespoon of sugar. Mix until well combined and press into the bottom of a greased 5-inch springform pan to form the crust.
  3. In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add in the granulated sugar and continue to mix until creamy.
  4. Add the vanilla extract, Irish cream liqueur, Kahlua, and sour cream to the cream cheese mixture. Mix until well combined.
  5. Add the egg and mix until just incorporated; do not overmix.
  6. Pour the cheesecake batter over the prepared crust in the springform pan.
  7. Bake in the preheated oven for about 25-30 minutes, or until the edges are set but the center still has a slight jiggle.
  8. Turn off the oven and let the cheesecake cool inside for an hour to prevent cracking.
  9. Remove from the oven and chill in the refrigerator for at least 4 hours, or overnight for best results.
  10. Once chilled, slice and serve. Optionally, drizzle with extra Irish cream or Kahlua for added flavor.
