Ingredients:

  • 4 chicken thighs, bone-in and skin-on
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons ketchup
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 teaspoon allspice
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • 1/2 teaspoon black pepper
  • 1 tablespoon vegetable oil
  • 2 green onions, chopped (for garnish)
  • Fresh lime wedges (for serving)

Instructions:

  1. In a bowl, whisk together soy sauce, brown sugar, apple cider vinegar, ketchup, Dijon mustard, garlic, ginger, allspice, smoked paprika, cayenne pepper, black pepper, and vegetable oil to create the marinade.
  2. Place the chicken thighs in a resealable plastic bag or a shallow dish, and pour the marinade over the chicken. Seal the bag or cover the dish, and refrigerate for at least 2 hours, preferably overnight.
  3. Preheat the grill to medium-high heat. Remove the chicken from the marinade, allowing excess to drip off.
  4. Grill the chicken thighs skin-side down for about 5-7 minutes until the skin is crispy and golden. Flip and continue grilling for another 10-15 minutes, or until the internal temperature reaches 165°F (75°C).
  5. Remove from the grill and let the chicken rest for 5 minutes before serving.
