Ingredients:

  • 4 chicken thighs, bone-in and skin-on
  • 3 tablespoons jerk seasoning
  • 2 tablespoons olive oil
  • 1 lime, juiced
  • 1 teaspoon salt
  • 1 ripe mango, diced
  • 1/2 red bell pepper, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeño, seeded and minced
  • Salt and pepper to taste

Instructions:

  1. In a bowl, mix jerk seasoning, olive oil, lime juice, and salt to create a marinade.
  2. Rub the marinade all over the chicken thighs, ensuring they are well-coated. Let marinate for at least 1 hour, preferably overnight.
  3. Preheat the grill to medium-high heat. Grill the chicken thighs for about 6-8 minutes on each side, or until the internal temperature reaches 165°F (75°C).
  4. While the chicken is grilling, prepare the mango salsa by combining diced mango, red bell pepper, red onion, cilantro, jalapeño, and a pinch of salt and pepper in a bowl. Mix well.
  5. Once the chicken is cooked, remove from the grill and let it rest for a few minutes.
  6. Serve the jerk chicken topped with mango salsa and enjoy!
