Ingredients:

  • 1 lb ribeye steak, thinly sliced
  • 1 medium onion, sliced
  • 1 bell pepper, sliced (red or green)
  • 1 cup mushrooms, sliced
  • 1-2 jalapeños, sliced (optional, for heat)
  • 4 slices provolone cheese
  • 2 hoagie rolls
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: mayonnaise or steak sauce for spreading

Instructions:

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add the sliced onions, bell peppers, and mushrooms to the skillet, sautéing until softened, about 5-7 minutes.
  3. Push the sautéed vegetables to one side of the skillet, then add the thinly sliced ribeye steak to the other side. Season with salt and pepper and cook until browned, about 3-4 minutes.
  4. Mix the vegetables and steak together in the skillet. If using jalapeños, add them now and stir to combine.
  5. Lay the provolone cheese slices over the steak mixture and cover the skillet for a minute or two until the cheese melts.
  6. Meanwhile, toast the hoagie rolls in a separate pan or oven until golden.
  7. Assemble the sandwich by placing the steak and cheese mixture into each toasted hoagie roll. Optionally, spread mayonnaise or steak sauce inside the rolls before adding the filling.
  8. Serve immediately and enjoy the flavorful combination!
