Ingredients:

  • 1 block firm tofu, drained and pressed
  • 2 cups kale, chopped
  • 1 cup plain yogurt (dairy or plant-based)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 tablespoon lemon juice
  • 1 tablespoon nutritional yeast (optional)
  • Red pepper flakes for garnish (optional)

Instructions:

  1. Cut the tofu into cubes and season with salt, pepper, and garlic powder.
  2. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the tofu cubes and cook until golden brown on all sides, about 8-10 minutes. Remove from heat and set aside.
  3. In the same skillet, add another tablespoon of olive oil and the chopped kale. Sauté for 5-7 minutes until the kale is wilted and tender. Season with salt, pepper, and lemon juice.
  4. To assemble the bowl, add a generous scoop of yogurt to a serving dish, top with the sautéed kale, and then add the crispy tofu on top.
  5. Sprinkle with nutritional yeast and red pepper flakes if desired. Serve immediately.
