Kiwi Lime Tart

Ingredients:

  • 1 ½ cups almond flour
  • ¼ cup coconut oil, melted
  • 2 tablespoons honey or maple syrup
  • 1/4 teaspoon salt
  • 2 large eggs
  • 2/3 cup fresh lime juice
  • 1 tablespoon lime zest
  • ½ cup sugar
  • 2 tablespoons cornstarch
  • 4 ripe kiwis, peeled and sliced
  • Whipped coconut cream (optional, for serving)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine almond flour, melted coconut oil, honey (or maple syrup), and salt. Mix until a dough forms.
  3. Press the dough into a tart pan evenly across the bottom and up the sides. Prick the bottom with a fork.
  4. Bake for 10-12 minutes or until lightly golden. Remove from the oven and let cool.
  5. In a saucepan over medium heat, whisk together eggs, lime juice, lime zest, sugar, and cornstarch until smooth.
  6. Cook the mixture, stirring constantly, until it thickens and bubbles. Remove from heat.
  7. Pour the lime filling into the cooled tart crust and let it set in the refrigerator for at least 2 hours.
  8. Once set, arrange the sliced kiwi on top of the tart.
  9. Serve with whipped coconut cream if desired.
