Ingredients:

  • 8 oz rice noodles
  • 1 cup kimchi, chopped
  • 2 tbsp peanut butter
  • 2 tbsp soy sauce (or tamari for gluten-free)
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 cup mixed vegetables (bell peppers, carrots, and snap peas)
  • 2 green onions, sliced
  • 1 tbsp sesame seeds
  • 1 tsp chili paste (optional, for heat)

Instructions:

  1. Cook the rice noodles according to package instructions, then drain and set aside.
  2. In a bowl, mix peanut butter, soy sauce, rice vinegar, sesame oil, and chili paste (if using) until smooth. Add a little water if needed to thin out the sauce.
  3. In a large skillet, heat a little oil over medium heat and stir-fry the mixed vegetables until tender but crisp, about 3-4 minutes.
  4. Add the chopped kimchi to the skillet and stir-fry for another 2 minutes.
  5. Add the cooked noodles to the skillet and pour the peanut sauce over. Toss everything together until well coated and heated through.
  6. Serve in bowls, garnished with sliced green onions and sesame seeds.
