Lava Haloumi and Tofu with Spicy Mango Sauce

Ingredients:

  • 200g haloumi cheese, sliced
  • 200g firm tofu, pressed and sliced
  • 1 ripe mango, diced
  • 1 tablespoon sriracha sauce
  • 1 tablespoon lime juice
  • 1 tablespoon honey or agave syrup (for vegan option)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Instructions:

  1. Preheat a grill or grill pan over medium-high heat.
  2. In a bowl, mix the diced mango, sriracha sauce, lime juice, and honey/agave syrup to create the spicy mango sauce. Set aside.
  3. Brush the haloumi and tofu slices with olive oil and season with salt and pepper.
  4. Grill the haloumi for about 2-3 minutes on each side until golden brown and crispy.
  5. Grill the tofu for about 4-5 minutes on each side until it has nice grill marks and is heated through.
  6. To serve, place the grilled haloumi and tofu on a plate, drizzle with the spicy mango sauce, and garnish with fresh cilantro.
