Ingredients:

  • 2 cups heavy cream
  • 1/2 cup whole milk
  • 1/3 cup honey
  • 1 tablespoon dried culinary lavender
  • 2 1/2 teaspoons gelatin powder
  • 3 tablespoons cold water
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions:

  1. In a small bowl, sprinkle the gelatin over the cold water and let it bloom for about 5 minutes.
  2. In a saucepan, combine the heavy cream, whole milk, honey, dried lavender, and a pinch of salt. Heat over medium heat until it just begins to simmer, stirring occasionally.
  3. Remove the saucepan from the heat. Stir in the bloomed gelatin until fully dissolved.
  4. Add vanilla extract and strain the mixture through a fine mesh sieve to remove the lavender buds.
  5. Pour the mixture into individual serving glasses or molds and refrigerate for at least 4 hours, or until set.
  6. Serve chilled, optionally garnished with fresh lavender sprigs or a drizzle of honey.
