Ingredients:

  • 2 leeks, cleaned and sliced
  • 1 cup sweet corn (fresh or frozen)
  • 4 green onions, chopped
  • 2 cups lettuce, roughly chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon soy sauce (optional)
  • 1 teaspoon sesame oil (for drizzling)
  • Sesame seeds for garnish

Instructions:

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the sliced leeks and sauté for about 5 minutes until they become soft and translucent.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the sweet corn and continue to stir-fry for another 3-4 minutes until heated through.
  5. Fold in the chopped green onions and lettuce, cooking until the lettuce wilts slightly, about 2 minutes.
  6. Season with salt, pepper, and soy sauce (if using). Mix well to combine.
  7. Remove from heat and drizzle with sesame oil. Toss gently.
  8. Serve warm, garnished with sesame seeds.
