Ingredients:

  • 8 oz fettuccine pasta
  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 lemon (zested and juiced)
  • 1/4 cup fresh basil leaves, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup cherry tomatoes, halved

Instructions:

  1. Cook the fettuccine pasta according to package instructions until al dente. Drain and set aside.
  2. Season the chicken breasts with salt and pepper.
  3. In a large skillet, heat olive oil over medium heat. Add the chicken breasts and cook for about 6-7 minutes per side, or until fully cooked and golden brown. Remove from skillet and let rest for a few minutes before slicing.
