Ingredients:

  • 8 oz fettuccine pasta
  • 2 chicken breasts, boneless and skinless
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 lemon, zested and juiced
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream
  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste
  • Parmesan cheese, for serving

Instructions:

  1. Cook the fettuccine pasta according to package instructions. Drain and set aside.
  2. Season the chicken breasts with salt and pepper.
  3. In a large skillet, heat olive oil over medium heat. Add the chicken breasts and cook until golden brown and cooked through, about 6-7 minutes per side. Remove from the skillet and let rest before slicing.
  4. In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
  5. Pour in the chicken broth, lemon juice, and zest, scraping up any browned bits from the bottom of the pan. Allow to simmer for 2-3 minutes.
  6. Stir in the heavy cream and chopped basil, mixing until well combined. Season with salt and pepper to taste.
  7. Add the cooked fettuccine to the skillet, tossing to coat in the sauce.
  8. Serve the pasta topped with sliced chicken and a sprinkle of Parmesan cheese.
