Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1/4 cup fresh lemon juice
  • 1/4 cup olive oil
  • 2 tablespoons fresh basil, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup quinoa
  • 2 cups water or chicken broth
  • 1/2 teaspoon garlic powder
  • 1/4 cup grated Parmesan cheese (optional)
  • Lemon wedges for serving
  • Fresh basil leaves for garnish

Instructions:

  1. In a bowl, whisk together lemon juice, olive oil, chopped basil, minced garlic, salt, and black pepper.
  2. Place the chicken breasts in a resealable bag or shallow dish and pour the marinade over them. Seal or cover and refrigerate for at least 30 minutes.
  3. While the chicken marinates, rinse the quinoa under cold water. In a medium saucepan, combine quinoa and water (or chicken broth) and bring to a boil.
  4. Reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is fluffy and the liquid is absorbed.
  5. In the last few minutes of cooking the quinoa, heat a non-stick skillet over medium heat. Remove the chicken from the marinade and cook for 6-7 minutes on each side, or until cooked through and golden brown.
  6. Stir in garlic powder and Parmesan cheese (if using) into the cooked quinoa for added flavor.
  7. Serve the chicken over a bed of garlic quinoa, garnished with fresh basil leaves and lemon wedges.
